This healthy recipe for Baked Acorn Squash is one of my favorites as it shows that, even with diabetes, it’s still possible to eat fantastic food. The key to this is a balance of smaller portions, interesting flavors, and nutritious ingredients. What makes it so good is that there are only 15 grams of carbohydrate in a full cup of winter squash. So, by eating something like this, you can enjoy larger portions worry free.
