I recently had the pleasure of visiting a friend’s website and found it to be a refreshing source of healthy recipes. What caught my eye however, was a unique take on overnight oats. Here’s Lauren’s intro to her delicious recipe and the link to the recipe itself:

I recently purchased a 3 pack of large cans of pumpkin puree (thank you Costco), and have been experimenting with all kinds of recipes from smoothies to pancakes to muffins, oatmeal and bread pudding.
