Hot Chicken Cilantro Soup

Head South of the border with this Mexican inspired soup, Hot Chicken Cilantro soup is the perfect meal for a quick week night or weekend meal.

Hot Chicken Cilantro Soup

Ingredients
  • ~ 1lb. bone-in split chicken breasts with ribs
  • ¼ tsp garlic paste
  • ½ tsp ginger paste
  • 1 Tbsp onion paste
  • ¼ tsp cumin powder
  • ½ tsp coriander powder
  • 1 tsp salt
  • 1 tsp diced onion
  • ½ Tbsp oil
  • 2 tbsp cilantro, sliced
Instructions
  1. Place a large pot over medium heat.
  2. Pour about 3 quarts of water in pot and bring to a boi.
  3. Add chicken bone to pot and cook until about half of water has evaporated.
  4. Add ginger, onion, garlic, salt, coriander powder and cumin powder to pot, and continue to boil chicken bones until about one quart of water remains in the soup mixture.
  5. Add sliced green chili and cilantro to soup.
  6. Serve soup warm and enjoy.
