Creamy Vegetable Soup

What could be better than a hearty, creamy vegetable soup for dinner?  Treat your family to this healthy and tasty soup tonight!

Creamy Vegetable Soup
Serves: 4
  • 1 Tbsp butter
  • 2 Tbsp onion, sliced
  • 2 Tbsp flour
  • 1 cup milk
  • ~1/4 lb carrot, diced
  • ~1/4 lb cauliflower, cut into small pieces
  • ~1/4 lb cabbage, sliced
  • ½ tsp salt
  1. Place a saucepan over medium heat.
  2. Place vegetables in saucepan and pour ½ cup water over vegetables.
  3. Bring water to a boil and cook for about 5 to 7 minutes.
  4. Drain water from vegetables and set them aside.
  5. Place a pan over medium heat.
  6. Add butter to pan.
  7. Once butter starts to melt, add onion to pan and cook until tender, stirring occassionally.
  8. Add flour to pan and stir constantly.
  9. Add hot milk slowly to pan, continuing to stir while pouring.
  10. After mixing milk and flour very well, add vegetables to pan with 4 cups water and salt.
  11. Bring water to a boil.
  12. Once water starts to boil, cover the pan for 10 minutes to simmer.
  13. Serve and enjoy soup while it’s hot.
