Eggplant Chutney

Eggplant Chutney

Ingredients
- 1 eggplant, washed and diced
- 1 Tbsp tamarind water
- 1 Tbsp sugar
- 1 tsp hot chili powder
- 1 tsp turmeric powder
- 1 Tbsp olive oil
- 1 Tbsp ground cumin seeds
- ½ tsp salt
Instructions
- Place a pan over medium heat.
- Add oil to and add all ingredients except cumin powder.
- Once a blooming aroma arises, simmer mixture on low heat and add cumin powder.
- Serve and enjoy chutney alone or with bread, rice, or tortilla.
