Eggplant Chutney

Eggplant Chutney

Serves: 4
  • 1 eggplant, washed and diced
  • 1 Tbsp tamarind water
  • 1 Tbsp sugar
  • 1 tsp hot chili powder
  • 1 tsp turmeric powder
  • 1 Tbsp olive oil
  • 1 Tbsp ground cumin seeds
  • ½ tsp salt
  1. Place a pan over medium heat.
  2. Add oil to and add all ingredients except cumin powder.
  3. Once a blooming aroma arises, simmer mixture on low heat and add cumin powder.
  4. Serve and enjoy chutney alone or with bread, rice, or tortilla.
