Eggplant with Yogurt
Serves: 4
  • 500g eggplant, sliced into 1 cm thick pieces
  • ½ cup yogurt
  • ½ tsp turmeric powder
  • ½ tsp chili powder
  • ½ tsp cumin, grounded
  • 1 tsp garlic, paste
  • ¼ tsp black pepper, powder
  • 1 tsp salt
  • 2 tbsp oil
  • ½ tsp cumin, grounded
  1. Mix turmeric powder, chili powder, cumin powder and salt with the eggplant. Fry the eggplant slices and keep aside.
  2. Beat yogurt with grounded cumin, black pepper powder and salt. Spread the yogurt mixture above the fried eggplant.
  3. Eggplant with yogurt is ready to serve.
