Watercress and Spinach Salad with Honey-Lemon Dressing
Serves: 4
  • Dressing
  • 1 piece lemon, juiced
  • 3 tablespoons extra-virgin olive oil
  • 2 teaspoons sugar-free honey
  • ¼ teaspoon salt
  • ¼ teaspoon ground black pepper
  • Salad
  • 4 cups watercress
  • 1 cup baby spinach
  • 1 piece Granny Smith apple, cored and finely sliced
  • 6 tablespoons fat-free feta cheese, crumbled
  1. In a medium bowl, whisk together olive oil and freshly-squeezed lemon juice.
  2. Add honey, salt, and pepper. Stir until well combined.
  3. In a large bowl toss together watercress, spinach, and apple.
  4. Drizzle the prepared dressing over the salad.
  5. Add crumbled feta cheese.
  6. Toss until the dressing is well incorporated.
