Mexican Hot Rice
An awesome Mexican dish of hot rice. A perfect side to your favorite Mexican meal.
Mexican Hot Rice

Serves: 4
Ingredients
- 1 cup Indian Basmati Rice, boiled, drained
- 1 Tbsp oil
- 1 Tbsp diced onion1 tsp diced green chilies
- 1 cup red ripe tomatoes, cubed
- 1 Tbsp raisins
- 1 tsp dry red chilies
- ~ 3 Tbsp pistachio
- 1 tsp red chili powder
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic, sliced
Instructions
- Place a pan over medium heat.
- Add oil to pan and heat for about a minute or so.
- Add onion, green chilies, garlic, dry red chili and boiled rice, and cook for 5 minutes.
- Stir the rice and add all other ingredients.
- Cover mixture with a lid and cook for 10 minutes on high heat.
- Reduce heat let rice simmer for 5 minutes.
- Remove rice from heat and enjoy.
