Almond Coconut Waffles with Banana

  • 2 cups almond flour
  • 2 tablespoons coconut flour
  • 4 medium eggs
  • 3/4 cup applesauce, unsweetened
  • 1/2 cup water
  • 1 tablespoon coconut oil, divided and melted
  • 4 banana, cut into small pieces
  • 1 teaspoon cinnamon, ground
  • cooking spray

Method

  1. Lightly grease waffle maker with cooking spray. Preheat to medium-high.
  2. In a medium bowl, combine almond flour, coconut flour, eggs, applesauce, water, 1 tablespoon coconut oil, and cinnamon. Mix well with a wooden spoon.
  3. Fold in the banana slices.
  4. Pour 1/4 cup of batter into the waffle maker, and spread the mixture evenly. Cover and cook for 1-2 minutes or until golden brown. Repeat procedure with the remaining batter.
  5. Place waffles in individual serving plates. Drizzle with honey, if desired.
  6. Serve and enjoy.
