Mexican Hot Rice

An awesome Mexican dish of hot rice.  A perfect side to your favorite Mexican meal.

Mexican Hot Rice

Ingredients
  • 1 cup Indian Basmati Rice, boiled, drained
  • 1 Tbsp oil
  • 1 Tbsp diced onion1 tsp diced green chilies
  • 1 cup red ripe tomatoes, cubed
  • 1 Tbsp raisins
  • 1 tsp dry red chilies
  • ~ 3 Tbsp pistachio
  • 1 tsp red chili powder
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic, sliced
Instructions
  1. Place a pan over medium heat.
  2. Add oil to pan and heat for about a minute or so.
  3. Add onion, green chilies, garlic, dry red chili and boiled rice, and cook for 5 minutes.
  4. Stir the rice and add all other ingredients.
  5. Cover mixture with a lid and cook for 10 minutes on high heat.
  6. Reduce heat let rice simmer for 5 minutes.
  7. Remove rice from heat and enjoy.
