Watercress and Spinach Salad with Honey-Lemon Dressing

Ingredients
- Dressing
- 1 piece lemon, juiced
- 3 tablespoons extra-virgin olive oil
- 2 teaspoons sugar-free honey
- ¼ teaspoon salt
- ¼ teaspoon ground black pepper
- Salad
- 4 cups watercress
- 1 cup baby spinach
- 1 piece Granny Smith apple, cored and finely sliced
- 6 tablespoons fat-free feta cheese, crumbled
Instructions
- In a medium bowl, whisk together olive oil and freshly-squeezed lemon juice.
- Add honey, salt, and pepper. Stir until well combined.
- In a large bowl toss together watercress, spinach, and apple.
- Drizzle the prepared dressing over the salad.
- Add crumbled feta cheese.
- Toss until the dressing is well incorporated.
